Do you think it would be wise to book a return ticket, print off the itinerary, and then cancel it within 24 hours of purchase, so you could get a full refund but still have proof of a return ticket?

I have done it before. Many airlines will give you an option to pay about 50USD extra for a 'flexi' ticket, or something by a similar name.

Those tickets will let you cancel without penalty (or just a very small penalty) up to a certain number of days/hours before the flight departs.

Some travel agents will do it for you, go ask them.
