Traditional Kindles use e-ink which is great in sunlight and where there's light - i.e. you would need a lamp to read at night. it doesn't cause strain on the eyes and the battery lasts several days between charges. It's only black and white / grayscale so images don't show very well, which doesn't make it very good for surfing the web.
The Kindle Fire uses an LCD similar to the iPad - not so good in sunlight and outdoors but has its own backlight for night reading. It's also full color, so images look great and you can surf the web on it. However, like reading a computer monitor, it may cause strain on the eyes if you're reading for extended periods.
