what? You dont like her anymore?

(seriously, its very dangerous to ride a scooter or moto in taiwan, best she not be on one if at all possible)

There is a big parking lot cross from the Muzha zoo. On the weekdays it's mostly empty. Up the hill near the cemetary not far from the zoo is a park with a long mostly empty road also empty on weekdays.

there are industrial parks on the outskirts of most towns, they should be reasonably quiet during weekends.

If I were going to teach my wife, (scary thought) I would take her up Chengtien Rd past the temple. (next to Yongning MRT, exit 2) just keep going up the mountain past the temple. Nice open road and not much traffic. Life insurance paid up?

Then take her to the Youngning MC (thats Motorcycle) parking lot and have her negotiate the rows of scooters. Let me know which haspital room in which you end up. I'll come visit.

As an addition, when you get to the parking lot, get off and let her make her own mistakes. It's difficult enough without a passenger. Full face helmet!
