I don't see anything wrong with complaining about an ex, unless it becomes too obsessive or destructive. It think it's natural to gripe; it releases pent-up frustrations and calms the mind. Remember: she's not complaining about you!
Mentioning an ex in the early stages of a relationship is a culturally conditioned no-no in the West; it's not the case here as far as I know.

I think if you listen carefully you can also learn a lot about the person and how they think, what's important to them and what possible pitfalls could be.
