They look like a kind of bamboo shoots, and the third character is bamboo shoot; searching, I think they are "Water Bamboo Shoots", but acc. to this page they're not really bamboo shoots at all:

It's a water plant, I call it water bamboo, but it isn't bamboo.

I know it as "ka bei sun" in Taiwanese, never heard it referred to in Mandarin but that could just be me :)

Hate the stuff, been banned from my house :) Has a certain astringent flavor to it.

That shit's awesome with 鹹水雞. A bag of this, broccoli, asparagus, mushrooms, chili peppers and chicken covered with vinegar is one of my favorite night market snacks.

Oh~I love it sooo much! There are many ways for Taiwanese to enjoy this kind of shoot. Here I can recommend some of them. 1. grill it while BBQ. 2. simply boil it and serve with a little bit salt on it. 3.boil it and then keep it in the refrigerator. When it's iced, serve with mayonnaise or salt. By these ways, you'll know how sweet and tasty it is!!!! :lick:
